This is another recipe posted for my cousin. Im just glad he wants to cook. lol. This is a smaller quantity than I normally make, so if you need a larger recipe, let me know.
2 boxes of Jiffy cornbread muffin mix
1 yellow/white onion
3 stems from celery stalk, sliced thinly
3 eggs beaten well
2 cups of Italian breadcrumbs
3 tbsp melted butter
3 tbsp cooking oil (preferrably olive)
1 large can chicken broth
2 tbsp paprika, plus more for garnish
1 tbsp black/white ground pepper
1 tbsp salt
1 tsp sage
Bake Jiffy mix according to directions. While that is baking, sautee onions and celery until translucent. When cornbread is baked, crumble into mixing bowl with breadcrumbs. Add chicken broth, eggs, paprika, salt, pepper, sage and melted butter. Smooth into baking dish, sprinkle with paprika and cook at 350 for up to 40 minutes, until firm and golden.

Baked Macaroni and Cheese
This one is posted today at the request of my cousin Al. Its not my usual mac and cheese recipe, but a very good, simple mac recipe.
1 box macaroni noodles
1/2 stick of butter
(2) 8-oz packages of shredded cheese, or (2) 8oz bricks of cheese (cubed).
2 cups of milk
1 tbsp salt
1 tbsp black/white ground pepper
2 eggs, beaten well
Boil macaroni according to the package directions. While the macaroni is cooking, warm milk in a saucepan. Add butter until melted, then slowly add 1/2 of the cheese to the milk mixture, stirring until melted. Add salt and pepper. Drain macaroni and mix with cheese sauce mixture. Stir in beaten egg. Place in a glass baking dish (probably 8x8 or 9x9) and top with remaining cheese. Bake at 375 until cheese melts golden brown. Italian bread crumbs can also be sprinkled on the top, but it doesn't change the flavor much.

Savory Cornish Game Hens
2 rock cornish game hens
2 tbsp cayenne pepper
2 tbsp lemon pepper
2 tbsp garlic powder
2 tbsp cajun seasoning
1 tsp black pepper
1 cup italian salad dressing
3 tbsp melted butter/margarine
1/4 cup balsamic/red wine vinegar
Wash hens. Plase breast side up in a roasting pan. Mix all ingredients except butter. Brush hens with mixture. Cover pan with aluminum foil. Cook in the oven at 350 degrees for 35-45 minutes. Brush with melted butter and raise temparature to 400 degrees. Cook for about 10 more minutes.
I usually serve with green beans and a pasta dish like macaroni and cheese.

"Graveyard Dirt" Pudding
This one is really good for Halloween, but I make it at other times too. Looks gross, tastes good.
2 large packages of Jello Chocolate Pudding
3/4 cup milk
1/4 cup condensed milk
1 package Oreo cookies
1 package gummy worms
1 tub whipped cream
Make Jello pudding following package directions. Mix in condensed milk. Fold in 3/4 of the whipped cream. Crumble Oreo cookies, reserving 10 for decoration. Mix in 2/3 gummy worms, saving remainder for decoration. Garnish with remaining Oreos and gummy worms.
Fettucine Alfredo w/Chicken
This one isnt my recipe. I found it on cooks.com a while back, but it's the best homemade alfredo sauce recipe Ive found yet. So here ya go!
1 lb. skinless, boned chicken breasts
2 tbsp. oil or favorite spray shortening
Garlic powder
Milk
Butter
Alfredo Sauce (see below)
1/2 lb. fettucini
Cook fettucini until tender. Cut chicken in strips or cubes. Sprinkle chicken with garlic powder. Saute in oil for 5 minutes per side until cooked through. Mix drained fettucini with cooked chicken. Pour Alfredo sauce over mixture, toss and serve. Makes 3 generous servings.
Alfredo Sauce:
1/2 cup cream cheese
1 cup milk skim-2 %
3 tbsp freshly grated Parmesan cheese
1 clove garlic
1 tbsp pepper
1/2 tsp salt
3 tbsp dry parsley or 1/2 cup fresh
The best way to make this consistent is to use a blender. Put cream cheese, milk, Parmesan cheese, garlic, pepper and salt in blender. Blend until there are no clumps, pour into saucepan on medium heat, cook for about 10 minutes. While cooking add parsley (if fresh chop finely) and save some for garnish.
